<p>If you been at the shop recently you might have noticed that we have a new addition to our farm fresh eggs. Duck eggs. We tried them and we love them. Here is the scoop  compared to one large chicken egg, one duck egg has: 44% more protein, 270% more Iron, 88%  more Calcium, 158% more Potassium, 361% more Vitamin B-6, 278% more Vitamin B-12 and 57% more Vitamin D (from Health Canada&#8217;s Canadian Nutrient File). More vitamin D always a great bonus  during the winter months. Cooking with duck eggs isn&#8217;t much different than chicken eggs however, the  yolks of duck eggs have more fat and the whites more protein than those of  chicken eggs. You need to take keep this difference n mind when cooking. Somewhat gentler cooking is the key.  If you are baker , the extra protien in the egg whites will give your  baked goods more loft and the extra fat will give them a richer taste.</p>

			<content:encoded><![CDATA[<p>Welcome to our new website!  The new format gives me the opportunity to showcase new products as well as my favourite standbys, recipes and stories.  We have always served and connected the community in our store &#8211; now we extend that to the cyber world!</p>
<p>&nbsp;</p>
<p>I wrote my first blog ever in January of 2011 on our original website.  My New Year&#8217;s resolution that year was to offer more local, natural and organic meats.  I&#8217;m proud to say we&#8217;ve done that!  Mennonite-raised chicken from Sharon, Beretta beef from King City, Beverly Creek lamb from Millgrove &#8211; the list goes on.  The community asked for this and we listened.</p>

<p>Small butcher shops like ours buy in smaller quantities from small farms &#8211; for ultimate traceability.  We grind our own meat in-house.  Our beef is naturally aged to tenderize and ensure food safety.  Time does the aging and tenderizing, not needles.</p>
<p>&nbsp;</p>
<p>Consumers are realizing more than ever that small, local butcher shops are their best choice for safe (and delicious!) meat.</p>
